Traditional Thai cuisine is renowned for its inimitable aromas and flavours which give it a special place among the major cuisines of the world. Drawing inspiration from a number of Southeast Asian methods of cookery, Thai gastronomy is known for its lightly cooked preparations which often feature strong aromas. Spiciness is an important aspect of the cuisine of Thailand, but it is not overpowering or obtrusive.
As is the case with the cuisine of other parts of Asia, Thai cuisine is fundamentally rooted in its focus on detail, balance and variety. Thai chefs identify four principal taste elements, namely sour, salty, sweet and bitter. Three or four of these elements are balanced in every dish or the meal as a whole. Thailand’s cookery often features the combination of different elements to make a well-coordinated whole.
There are many signature dishes that are inseparable with popular Thai cuisine. Perhaps the best known local dish of all is the tom yam goong soup, consisting of jumbo shrimps with mushrooms stewed with fish sauce, chillies, lime leaves, lemongrass, shallots and galangal. It can be used as an appetizer or combined with rice as a fine principal dish.
Pad Thai is one of the most recognized Thai noodle dishes, and is combined with an array of ingredients like bean sprouts, onion, tofu and finely crushed peanuts. A special feature here is that the individual diner chooses how much of the accompaniments, such as sugar, fish sauce, crushed peanuts and chilli powder to add to the meal. Another popular dish is noodle soup, or kuay tiew which can be flavoured with an array of ingredients and stewed with chicken, beef, pork, duck, seafood and other meats.
You will also find many interesting desserts within the spectrum of Thai cuisine, including various kinds of cakes, puddings and jellies demonstrating genuine local artistry. The delicious snack foods available in the cities are also well worth sampling, and many cheap snacks are offered by roadside vendors.
