Ingredients
150g Fresh Rice Noodle (Bánh Phở)
130g Beef Fillet
200g Beef Bone
50g Vietnamese Herbs
10g Spring Onion
15g Onion
15g Beansprout
2 Pods Star Anise
1 Cinnamon Stick
5 Slides Fresh Ginger
0.3g Ajinomoto (MSG)
0.5g Sugar
0.5g Chicken Powder
0.3g Salt
10ml Fish Sauce
10g Lemon
15ml Chilli Sauce
15ml Hoisin Sauce
Method of preparation
- Place beef bones, star anise, cinnamon, onion, shallots and grilled ginger in a large stockpot and cover with water.
- Bring to a boil and reduce heat to low. Remove foamy layer on the surface.
- Simmer on low heat for 5 hours then strain the broth, and add seasoning.
- In a separate pot, add beansprouts and rice noodle to boiled water, then set it aside to dry.
- Place boiled rice noodle with beansprouts in a bowl. Add sliced beef fillet and onion above.
- Pour hot broth over the top. Stir and let it sit until the beef is partially cooked. Thereafter, serve with Vietnamese herbs, chilli sauce, hoisin sauce and sliced chilli on the side.
