Seafood Delicacies in the Maldives
With 1,200 species of fish, mollusks and crustaceans teeming in the ocean around it the Maldives boasts of some of the freshest seafood in the world based on quality, texture, taste and colour. With this huge choice at hand, the long term seafood preference among the Maldivians has been skip jack and yellow fin tuna followed by little tunny, frigate tuna, big eyed scad, wahoo and mahi mahi and a variety of reef fish such as red snapper, emperor, job fish and trevalley which are prepared in numerous delicious ways into traditional delicacies to be consumed with rice, bread or chapatti, all on their own, grilled, barbequed and sometimes added to pizzas.
Skip jack Tuna, the base of many Maldivian seafood delicacies is turned into curries and processed into hard pieces known as Maldive Fish which is flaked and used to enhance curries. Dried and smoked tuna mixed with coconut and onions is a popular filling for pastries, pastry balls, for ‘roshis’, the Maldivian coconut rotti and deep fried rolls. It is also turned into fish cakes mixed with spices and is wrapped in bread and baked and fried with chili and garlic.
Traditional seafood delicacies handed down through the ages include Garudiya a clear fish broth made from tuna which is consumed almost daily with any type of meal, rihaakuru a thick paste, the byproduct of making Maldive fish which is eaten with a starch as it is or flavoured with the addition of onions chili and curry leaves.
A whole range of seafood other than fish became popular with the advent of tourism and variation was added to their preparation. Grilled Maldivian lobster, tiger prawn, green mussel, calamari skewers, reef fish fillets and fresh seafood barbecues are now regular fare at beachfront restaurants and are delicious additions to Maldivian seafood delicacies.
