The pioneers of Filipino cuisine are migrants from Taiwan and China who brought with them the tradition of having rice as a staple diet. Merchants of Hokkien bartered porcelain, silk and bartered for sea cucumber and various spices leaving behind a taste for soya sauce, fish sauce, bean curd, fried spring noodles, a whole variety of noodles and the famous chopsuey.

Close ties with India brought along the biryani and coconut milk based dishes found their way through Malay-Indonesian ties. Then came along the Spanish, bringing with them the spicy Spanish and Mexican cuisine along with practices of using chili peppers, tomatoes, potatoes and corn that the Spaniards traded from America.
With many such influences the Filipino cuisine is diverse and you would expect it to have no original flavour but surprisingly it has characteristics so unique to itself. Counterpoint is a famous feature of this cuisine where sweet, salty and sour elements are combined. Classic examples of this style include sweet coco rice pudding with salted fish, salty cheese used as sweet cheesecake ingredient or even as flavour for ice cream. Filipino cuisine also follows the art of preservation things are marinated using both ginger and garlic and also smoking. This technique was developed mainly to preserve food in the tropical Filipino weather.
