Vegan Kimchi

Kimchi is traditionally made with fish sauce or brined shrimp; this is what brings out its unique umami flavour. However, it is possible to make a vegan version of Kimchi. Tofu Gimbap

While they may look like Sushi at first glance, they are, in fact, Gimbap, which is made with tofu, seasoned vegetables, and rice. It is also ideal for a quick meal especially if you are staying at a serviced residence in Seoul as it is easy to make.

Kongguksu

Ideal for hot summer days, this noodle dish is immersed in a cold soy milk broth. Since Kongguksu is traditionally a vegan dish, there is no need to make any substitutions to the recipe.

While this rice dish is generally served with meat, vegetables, and chilli paste, tofu can be used as a substitute for meat.
