Who doesn’t like cookies? Whether they are gooey, rock hard or crumbly, cookies are simply delightful and they come in all sorts of shapes and sizes. There’s the famous gingerbread man, the seasonal Christmas tree, the romantic heart and the most dazzling of all- the Star Cookie! So here are two types of star cookies to bring out the baking star in you!
Melania Trump’s Star Cookies
The first lady of the most powerful nation in the world sure knows how to make some seriously good cookies. She shared her cherished recipe for star cookies for the 2016 Presidential Cookie Poll.
To make 4 dozen cookies here’s what you need,
2 cups of flour
½ teaspoon of baking soda
6 tablespoons of butter, softened
1 cup icing sugar
2 egg yolks
1 egg white
2 tablespoon sour cream
Sift flour and baking soda together. Set it aside. Beat sugar and butter until creamy. Gradually add the egg yolks and the white, one each a time, until the mixture is light. Put in the sour cream and beat until smooth. Gradually fold in the flour to the mixture until the dough comes together. Separate into 2 disks which should be wrapped in plastic and refrigerated for at least 30 minutes. In the meantime heat the oven to 350°. Take out the dough and flatten one of the disks with a rolling pin on a flour-spread oil paper to 1/8-inch thickness. Cut out shapes with a 21/2-inch star cookie cutter and place on an oil-paper-lined baking tray. Repeat the same procedure with the second disk. The cookies should be baked 10 minutes (per batch) until they turn golden.
Spiced Star Cookies
A feisty version of star cookies! The list of ingredients for this is longer than the above but if you shop at a place like Keells Super which sells household items online, you can order the ingredients while at home itself.
1/2 cup unsalted butter
3/4 cup brown sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/2 teaspoon ground mace (if mace is hard to find use ground nutmeg instead)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 1/2 cups All-Purpose Flour
1/2 cup toasted almond flour
1 teaspoon baking powder
2 to 4 tablespoons milk
Mix together the sugar, spices, butter, vanilla, and salt. Fold in the almond flour, all-purpose flour, baking powder and then the milk enough to make a stiff dough. Just like in the previous recipe, separate into 2 and refrigerate. Preheat oven to 325°F. Prepare the cookies the same way as the previous recipe and bake for 15 to 20 minutes until they are lightly brown at the edges. If you desire, you can an icing by mixing together 1/2 cup icing sugar with 3 to 4 teaspoons milk. Drizzle over your stars and munch like the cookie monster!
