Hummus, to begin with, is a big variety of chickpeas spread on pita, a traditional Arabic bread variety. Arabians prefer it with more garlic, as it has a spicier taste. If you are a pizza lover, then the Arab culinary world has a surprise for you. Manakeesh could be considered Arabic pizza and has cheese, meat or herbs spread on it. It is usually had for either breakfast or lunch.
Arayes, Lebanese meat-stuffed pitas, is another favourite Arabic delicacy. Arayes has a nutty flavour. Most hotels and resorts such as Desert Islands Resort & Spa by Anantara are likely to offer this delicacy in their restaurants. Grilled halloumi is an assortment of tiny chewy slabs. Made from goat and sheep milk, this delicacy is said to have no bacteria or acid used during its processing. This is also available in many Arabic restaurants in Abu Dhabi.
Falafel is the fried version of chickpeas along with herbs. It serves as a fantastic snack as well as a delicious pita filler. You will fall in love with it at the first moment you taste it.
Tabouleh is special delight for vegetarians. It is made of bulgur, mint, tomatoes, onion and parsley. This popular salad is a common find in Jordan. Moutabal/baba ghanoush is an eggplant delicacy spiced with chilli.
Fattoush is another salad unique to the Arabic world. A combination of lettuce, tomatoes, onion, lemon, garlic, olive oil, mint and cucumbers, this salad offers a magical taste. Umm Ali is a bread pudding which has its origins in Egypt. It is a pastry cooked with milk and cream. There are other varieties to Umm Ali with combinations of raisins, pistachios, croissant and condensed milk.
Shawarma is an assortment of chicken kebabs which is coated in garlic puree, and salad. These are all wrapped in pita. It is widely available even outside the Middle East. The moment you taste your first Shawarma, you will definitely go for another.
Kofta is made using minced lamb, and is spherical in shape. Sometimes it is made of beef too, along with onions. This delicacy is best tasted when it is either fried or grilled, and with the addition of a spicy sauce. The Middle Eastern countries offer Kofta in cylindrical shapes, and on a stick.
